A mag. Matej Gregor\u010di\u010d z In\u0161tituta za varovanje zdravja opozarja, da ga ne potrebujemo niti toliko.<\/p>\n<h2>Dovolj je \u017ee polovica priporo\u010dene vrednosti rde\u010dega mesa<\/h2>\n<p><b>Mag. Matej Gregor\u010di\u010d <\/b>opozarja, da koli\u010dina rde\u010dega mesa oziroma mesnih izdelkov, ve\u010dja od 300 g na teden, \u017ee lahko predstavlja tveganje, medtem ko koli\u010dine nad 500g na teden \u017ee lahko predstavljajo resno tveganje.\u00a0 <i>&#8220;Priporo\u010dila sku\u0161ajo s temi omejitvami predvsem vplivati na stali\u0161\u010de ljudi, da rde\u010dega mesa in mesnih izdelkov ne vklju\u010dujejo v jedilnike vsakodnevno,&#8221;<\/i> pojasnjuje Gregor\u010di\u010d, ki \u0161e dodaja, da trdni dokazi o povezavi s kolorektalnim rakom obstajajo le za izdelke iz mesa, kot so \u0161unka, salame in slanina, zato opozarjajo, da je treba le te u\u017eivati v priporo\u010denih koli\u010dinah in ne prepogosto, <i>&#8220;Beljakovine \u017eivalske izvora so sicer nujno potrebne, vendar na\u0161e potrebe zadovoljijo \u017ee majhne porcije (npr. pol manj\u0161e od trenutno uporabljenih normativov oziroma sedanjih navad).<\/i><i>&#8220;<\/i> Svetuje \u0161e, da, \u010de \u017ee izbiramo mesne izdelke, izbiramo tiste, kjer se vidi struktura mesa (npr. \u0161unka, pi\u0161\u010dan\u010dje prsi ipd.) in ne tistih, kjer je struktura homogena zaradi mletja.<\/p>\n<h2>Kako nam lahko prevelike koli\u010dine rde\u010dega mesa \u0161kodijo?<\/h2>\n<p>Zadnje raziskave so pokazale, da je rde\u010de meso sicer izredno pomemben vir \u017eeleza in da ga je pametno vklju\u010diti v prehrano, vendar pa ve\u010dje koli\u010dine rde\u010dega mesa pove\u010dajo mo\u017enost za nastanek raka debelega \u010drevesa in danke, za katerim v Sloveniji vsako leto zboli pribli\u017eno 1300 ljudi. U\u017eivanje prevelikih koli\u010din rde\u010dega mesa pa povezujejo tudi z nastankom sr\u010dnih bolezni, osteoporoze, sladkorne bolezni tipa 2 in drugih oblik raka, kot so rak dojk, plju\u010dni rak in rak prostate, saj rde\u010de meso vsebuje tudi velike koli\u010dine ma\u0161\u010dobe.<\/p>\n<h2>Previdno tudi s pripravo rde\u010dega mesa<\/h2>\n<p>Slovenci po besedah mag. Gregor\u010di\u010da zau\u017eijemo ravno prav\u0161nje koli\u010dine mesa, najbolj problemati\u010dno pa je,\u00a0da kar eno tretjino vsega mesa zau\u017eijemo v obliki konzerviranih mesnih jedi in mesnih izdelkih, ki vsebujejo veliko dodane soli in aditivov, in so pripravljeni z zdravju nevarnimi postopki. <i>&#8220;Poznana je povezava med nastankom nitrozaminov in u\u017eivanjem suhomesnatih izdelkov zaradi postopkov njihove priprave. Odsvetuje se tudi postopke, pri katerih je meso podvr\u017eeno termi\u010dni obdelavi pri visokih temperaturah, kot je npr. pe\u010denje mesa na \u017earu, kjer nastajajo spojine s kancerogenim u\u010dinkom (npr. policikli\u010dni aromatski ogljikovodiki, heterocikli\u010dni amini ipd.). S priporo\u010denimi postopki priprave mesa se tem tveganjem lahko uspe\u0161no izognemo,&#8221; <\/i>svari Gregor\u010di\u010d in priporo\u010da, da meso pripravljamo s kuhanjem, du\u0161enjem, pe\u010denjem brez dodatka ma\u0161\u010dob (v lastnem soku) ali v konvektomatu, poleg tega jih ne smemo preve\u010d pope\u010di.
