Tako med drugim nastanejo tudi jogurt, kislo mleko, sir, kislo zelje, kis, vino in pivo, zadnje \u010dase pa je na policah vedno ve\u010d fermentiranih \u017eivil z zanimivimi imeni. Pri postopku fermentacije gre za naraven proces razgradnje organskih snovi, ponavadi sladkorja, ob ustreznih pogojih, navadno ob odsotnosti kisika ter primerni temperaturi in s pomo\u010djo mikroorganizmov, kot so kvasovke, mle\u010dnokislinske bakterije ali plesni. Za fermentiranje lahko uporabimo skoraj vsa \u017eivila &#8211; od sadja in zelenjave do \u017eit, mleka in stro\u010dnic, pa tudi meso, ribe in \u010daj, dodajajo na zvezi potro\u0161nikov.<\/p>\n<figure>\n\t\t\t\t\t<img loading=\"lazy\" decoding=\"async\" width=\"660\" height=\"320\" src=\"image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" class=\"lazyload\" data-src=\"https:\/\/moski.hudo.com\/wp-content\/uploads\/2021\/01\/profimedia-0169172157-320x155.jpg\" data-srcset=\"https:\/\/moski.hudo.com\/wp-content\/uploads\/2021\/01\/profimedia-0169172157-660x320.jpg 660w,https:\/\/moski.hudo.com\/wp-content\/uploads\/2021\/01\/profimedia-0169172157-320x155.jpg 330w\" \/><figcaption>Kim\u010di je korejska razli\u010dica kislega zelja, ki je zaradi za\u010dimb in \u0161tevilnih sestavin izjemno polnega okusa \/ foto Profimedia<\/figcaption><\/figure>\n<p>&#8220;Med najbolj znanimi tradicionalnimi fermentiranimi \u017eivili sta zagotovo kislo zelje ter repa, ki vsebujeta malo ma\u0161\u010dob in ogljikovih hidratov, a veliko koristnih snovi: prehranske vlaknine, vitamine (beta karoten, vitamin C, riboflavin, niacin in tiamin) in minerale (kalij, natrij, kalcij, magnezij, \u017eelezo in fosfor), v oblikah, ki jih telo lahko dobro izkoristi,&#8221; je poudarila Nika Kremi\u0107.<\/p>\n<p>Kot navajajo na zvezi potro\u0161nikov, postopek fermentacije doma ni zahteven. &#8220;V \u010dist kozarec nalo\u017eite o\u010di\u0161\u010deno, oprano in narezano zelenjavo ter jo prelijte s slanico. Paziti morate, da zelenjava ne priplava na povr\u0161je, popolnoma mora biti pokrita s slanico (po potrebi jo dolijte ali uporabite posebne mre\u017eice, ki zelenjavo potisnejo navzdol). Kozarec le pokrijete s pokrovom (ga ne zapirajte), da lahko med vretjem plini izhlapijo.
